Strawberry Shortcake Waffle Recipe

Yields 8 waffles

2 GoodPop Strawberry Shortcake Pops

¾ cup oat milk

2 tablespoons unsalted butter (melted)

1 large egg

1 cup all purpose flour

1 tablespoon dark brown sugar

2 teaspoons baking powder

¼ teaspoon salt

In a measuring cup, add the 2 Strawberry Shortcake pops and oat milk. Microwave at 30-second intervals until the pop is melted. Remove sticks and combine in a bowl with the egg and melted butter. Whisk together to combine well.
In a separate large bowl, combine flour, sugar, baking powder and salt. Pour the wet ingredients into dry and stir until combined.
Preheat the mini waffle maker and spray with cooking oil.
Spoon ¼ cup of batter into the waffle maker and cook according to manufacturer’s instructions.
Remove cooked waffle from the waffle maker when done and stack on a paper towel lined plate.
When ready to serve, top with coconut whipped cream and a fresh strawberry!
