Strawberry Lemonade Compote

This super berry compote is the easiest topping for all your favorites. Think cakes, waffles, or even pancakes. But we love pairing it with a quick store-bought angel food cake for a deliciously sweet and tangy upgrade!

Ingredients

1.5 cups of mixed berries (strawberries and raspberries)

¼ c coconut sugar

1 Tbsp vegan butter (can use non-vegan unsalted butter as well)

3 GoodPop Strawberry Lemonade pops

Coconut whipped cream (optional)

1 Angel food cake loaf

Instructions

  1. Remove the popsicle stick from the Strawberry Lemonade pops.
  2. In a small sauce pot, melt butter over medium heat. 
  3. Add sugar and strawberry lemonade pops, stirring until the sugar has dissolved. 
  4. Add the berries and stir.
  5. Turn heat up to medium high and allow the mixture to come to a boil. Boil for 2 minutes, while stirring, then turn the heat down to low. Simmer for 15-20 minutes or until the sauce has thickened.
  6. Pull off heat and let sit for 5-10 minutes to continue to thicken. 
  7. Slice angel food cake and serve compote over the cake.  Top with the whipped cream if desired!
