Mini No Bake Cheesecakes
These vegan no bake mini cheesecakes are the perfect frozen treat for the holidays. Quick and easy to make!

Ingredients
2 boxes GoodPop Chocolate Vanilla Sandwiches
6 tbsp melted vegan butter
1 can coconut cream -
Instructions
- Separate the cookie from the cream filling of the sandwiches. Put cookies in one bowl and the filling in another.
- Add the cookies to a food processor with melted butter. Pulse until combined, it should create a batter-like consistency.
- Place 8 cupcake liners into a cupcake tray.
- Separate the base evenly into each cupcake liner. Gently push down the base into the liners using a spoon or separate cup.
- Whisk together the cream filling with coconut cream, until no clumps remain. Pour evenly into the cupcake liners on top of the chocolate base.
- Freeze for at least one hour.
- When ready to serve, let sit out for at least 30 minutes to become creamy!
