Mini No Bake Cheesecakes

These vegan no bake mini cheesecakes are the perfect frozen treat for the holidays. Quick and easy to make!

Ingredients

2 boxes GoodPop Chocolate Vanilla Sandwiches
6 tbsp melted vegan butter
1 can coconut cream

Instructions

1. Separate the cookie from the cream filling of the sandwiches. Put cookies in one bowl and the filling in another.
2. Add the cookies to a food processor with melted butter. Pulse until combined, it should create a batter-like consistency.
3. Place 8 cupcake liners into a cupcake tray.
4. Separate the base evenly into each cupcake liner. Gently push down the base into the liners using a spoon or separate cup.
5. Whisk together the cream filling with coconut cream, until no clumps remain. Pour evenly into the cupcake liners on top of the chocolate base.
6. Freeze for at least one hour.
7. When ready to serve, let sit out for at least 30 minutes to become creamy!
