Sparkling Fruit Salad

This fruit salad is bound to impress, with fresh fruit and a delicious sparkling strawberry citrus dressing. This sparkling fruit salad takes only a few minutes to pull together and is the perfect side or dessert for anything from potlucks, or a healthy weeknight sweet treat!

Ingredients

Sparkling Fruit Salad

2 Strawberry pops

¼ c Lemon Lime Mini Cans

2 cups grapes halved

1 cup raspberries 

3 mandarins, peeled

2 cups diced pineapple

Instructions

  1. Melt 2 Strawberry pops in the microwave for 30 seconds. Remove popsicle sticks.
  2. Add sparkling Lemon Lime Mini Can to the strawberry pops, stir. 
  3. To a large serving bowl, combine the halved grapes, raspberries, mandarin wedges, and diced pineapple. 
  4. Pour the sparkling Lemon Lime Strawberry dressing over the fruit. Toss fruit gently in the dressing.
  5. Cover and refrigerate for at least 30 minutes before serving, best if at least after 2 hours. 
  6. Serve with a slotted spoon!
